Keep It Healthy When Camping

By Paloma Cortes– Gleaners Nutrition Education Team

Camping is a great way to be close to nature, family and friends, and have lots of fun and relaxing days. But it could be difficult to keep it healthy when it comes to preparing food due to the lack of kitchen gadgets around.

In order to stick as much as possible to the My Plate eating guidelines, we should focus on increasing our fruit and vegetables intake so that way we can have more nutrients, fiber and vitamins needed for our body. We can make it happen if we plan our meals in advance and prepare some items upfront.

When it comes to deciding our breakfast, lunch and dinner options, we can squeeze in more colors coming from fruits and vegetables much easier than we think. For example, making scrambled eggs in the morning with pre diced onions, cherry tomatoes and spinach.

Or making ourselves a veggie packed tuna salad sandwich with lettuce and onions for a quick lunch. As for snacks, we can go with apples, peanut butter and rice cakes. When dinner time comes, it is easy to add pre sliced bell peppers, onions and mushrooms and grill them with marinated chicken or beef.
